My Wonderful hubby bought me a kitchen aid!
Problem: I just made the first batch of BC icing and it is just not right. Seems to be whipped....did I blend it to fast? how can I keep this from happening other than just using the slowest speed? (if that is the problem).
for regualar buttercream, use the paddle and the slowest speed once you start adding powdered sugar, you can use a higher speed to cream the butter/shortening/flavors
I agree, use the paddle attachment and not the wire whip. Also, Sugarshack suggested in her bc tips to fill the bowl to the rim. I do this now and it works GREAT. In my 4 1/2 qt KA I mix up 4 batches. Start out on low to add all the ingredients, then kick it up to speed 6 for 4-6 minutes. You wont' have ANY air bubbles! Oh, freeze extra frosting in 1 cup increments in ziplock bags.
Definately use the paddle attachment to make your BC frosting. The only time I ever use the wire whip is when I'm whipping egg whites, whipped cream, or anything else that requires alot of volume etc.,
BTW a great investment is the splatter shield...I love it!
I ususally mix up a double batch at a time and I use the paddle attachment on low speed (1) for adding in each ingredient and then once all blended I kick it up to 2 or 3 for about 2-3 minutes. I also agree the shield is a great thing to invest in!! I love my kitchenaid and I bought it as a christmas present to myself last year and it has been money well spent!!
