my b/c melts practicaly in my hands within minutes. How do I stop this or slow down the process? Last night I decorated a cake with the buttercream dream recipe and it went from really stiff to soft in less than 5 minutes. I'm sick of putting stuff in the frige or frezzer briefly to cool it back down to restiffen it up some just to put it back in a few minutes later. The all crisco b/c takes me about 9 minutes to heat up (but I really don't care for it much) Any advice???!!!

OK here is what I do - many tricks

OK my tricks:
I keep a frozen ice pack in the freezer. Whenever I work with buttercream, I rub my hands on it first and I also let the icing bag lay on it when I am not using it.
Another tip: I use small amounts of icing at a time. I keep one bag in the fridge and one to work with - I switch on and off.
Also, I put the bowl of icing I am using in the fridge on and off - to keep that cool.

I wear winter gloves.........sounds crazy I know.......but if it's hot out on top of me already having hot hands the bc melts in a minute flat it seems..........the thicker gloves don't allow the heat from my hands to transfer to the bag as quickly........I can pipe for almost 30 min. without any melting.........which is longer than I usually need for any given cake!
I have hot hands as well. I have found that the crusting buttercream recipe I found on the website works well with my hands.
True - buttercreams with shortening in them are a little better, but sometimes we hot handers have to pipe things like ganache - yikes! It turns to liquid in seconds if we're not careful. lol.
I've been going crazy with this problem. My wilton instructor said she has never seen someone melt b/c as fast as I can.
Good to know I'm not the only one inflicted with this problem.
and as far as piping ganache - I just can't - it melts in a millisecond! I think I've picked up enough tips where I can now possibly manage the hot hands issue better. thanks! on the plus side my DH likes to snuggle up close in winter simply because he's cold and he says I'm like a furnace. ![]()
Heavier icing bags (lined canvas type stuff) help a lot.
I have t he same problem, I use the heavier bags, if it gets real bad I have a bowl of ice on the table covered with a cup towel, and then just lay my bags in the bowl when not in use. I may switch and do a border first, then do some flowers and go back and forth until I am done. I also will try and keep my hand a little more relaxed then a tight grip on the bag.
