Daisy Help!

I have a wedding cake coming up in about 3 weeks and the theme is daisies. The bride want white daisies with pale yellow centers on each tier of the cake. I tried royal icing daisies and had NO LUCK...they all looked different, sizes were not uniform...etc.... SO I have decided to do the daisies another way. Now onto my question...

I don't like the taste of fondant so I thought I would try MMF. Can I add gumtex to MMF to make the flowers dry harder, if so how much??

Should I mix the MMF with gumpaste...if so what ratio??

Or should I just use gumpaste to make the daisies??

I have very little experience with MMF, gumpaste or fondant so any help os appreciated.

I would use fondant with some gumtex or just gumpaste. MMF doesn't dry hard unless you just let it dry for weeks and weeks. I think they would still be too flimsy. Do you have the daisey templates for the flower nail?? That's what I've used for my daisies. I've only done it a few times, though. I think it would be cute for them to all be a little different, though. If they're too uniform, it won't be believable. Hope this helps and good luck

I dont have a lot of experience with gumpaste either but I did mix about 50/50 mmf and the premade gumpaste together and it dried hard and pretty quickly. You could then use the daisy cutter to make them. I have made a lot of daisies with royal icing and I think they turn out pretty. I have a couple of photos in my gallery. I use the wilton template and I now started doing the daisy the 'wrong' way by flipping the tip over. At first I didnt like it that way, but now I do think it is easier and prettier. My baby shower cake is done the 'right' way and the blue baptism cake is done the 'wrong'way.

gumpaste daisies are pretty easy - you should at least try. once you get the hang of it you'll be able to make a bunch of them quickly. I do them on wires, and to me the key is making all the centers a day in advance to let them dry solidly before you add them to the petals. I have some photos of them in my cakes - the flowerpot with the blackeyed susans - if you want to see what I mean.

I wish I could even do royal daisy's...the only flower that I just couldnt get in Wilton Course II icon_sad.gif

I've done daisies using royal icing and MMF with gumtex, and I have to say, that the MMF daises turned out much more uniform. PLUS, they were faster and easier to make. icon_smile.gif

I used the daisy cutter from the Wilton 3 pack, and it was pretty simple. Then I used the ball took for the petals to look for curled upward at the tips. Very fun flower to make. I used them on my bumble bee cake.

One more quick thing to add...the royal icing flowers are much more delicate and prone to breaking!

I have made daisys out of royal icing. I use the template from Wilton course and it is easier that way. I also read someone say that they do the daisys with the tip upside down, that is alot easier. When I make them I put the wide tip at the top instead of the bottom. It is so much easier. My Wilton teacher showed us after she showed us the right way. The daisys are alot more delicate then the fondant and they break so easily but look so pretty. Good luck!!

you can add 2 teaspoons of gum tex or gum trag to roughly 1lb or 500grams of mmf.

this will make it dry hard

Thank you everyone for you advice!!

I have tried to daisy template using royal icing but this must just be one of those flowers that I can not get to look right. I tried the right way and the wrong way!!!! I used a almost a whole batch of royal icing practicing trying to get the hang of it and they just looked ok but slightly deformed!!

I bought the wilton daisy cutters and tried with MMF. I like the way they look but they are too soft to use (I didn't mix in enough gumpaste i think??).

They are going on a cake that will have the crusting cream cheese icing (recipe from this site)...if I use MMF mixed with gumtex or gumpaste will the daisies be ok, I plan to put them on on Friday?? i am delivering the cake on saturday morning?

I have to make a lot of daisies, how far in advance can I start making them??

Can I just say I love this site!!!!

You could use a daisy flower plunger. They are much easier. You can do them out of fondant. Use either Choco-Pan, Satin Ice or Pettinance if you don't like the Wilton(ugh) fondant.
