My daughter is getting married 8/4/2007. My best friend (ljberry on this site) is doing the bride's cake, I'm doing the groom's cake, and 75 bridal dress cookies, 75 tuxedo cookies. How do I freeze these in advance to keep fresh, but have the baking behind me so on the Monday and Tuesday the week of the wedding, I can thaw and decorate??? I want them to taste as good as they look...we're tying them in cellophane clear bags with ribbons in her wedding colors, with their names and dates printed on the ribbon...ought to be nice favors...and ideas on how to display at the wedding would be appreciated...I have a 6-tiered acrylic cake stand I was thinking of using...just couldn't decide how to set it up.
I'm also doing a lot of the food and the groom's cake (this is going to be the top of the three-tiered cake, he's a hunter and bass fisherman, so I'm trying to incorporate both in the design of the cake...so stay posted for the final results! Going to be a mind boggling weak, so add me to your prayer list!

Very easy. Bake and cool. I individually wrap each cookie in plastic wrap (a couple of times), place in ziploc bag and if I have the freezer space, place the bag in a air-tight container and place in freezer that way. If not, the ziploc bag with do with the plastic-wrapped cookies. When you're ready, just take out, thaw and decorate.

I make lots of cookies, espically after November first.
Just bake and cool. Now I use the square freezer containers - glad or rubbermaid. You can even use the gallon size zip lock bags. Put one layer of cookies down then put a piece of wax paper on top then stack you next layer.
sometime I make the wax paper longer and just fold over the layer instead of tearing off a new sheet ever time.
Never has any problems. I have been doing this for the last 8 years. Make sure you keep a box of baking soda in the freezer to absorb any smells. You may not smell anything but you do not want any funny taste in the cookies.
Just take and thaw. Then decorate.
I use plastic rectangular boxes...fill them w/stacked cookies, wrap each container in Press and Seal wrap...and place each container in a gallon size freezer bag.
One important tip - when you remove the cookies from the freezer, allow them to return to room temp BEFORE you unwrap them! You don't want condensation to form on your cookies...this will ruin them.
