I have a request for an anniversary cake with cream cheese frosting, but I have never made it before. I guess this might be a silly question, but here it goes. Does it smooth? What kind decorations can you use on it? If they want flowers can I do royal icing and the cakes will need to be refridgerated right up until they are needed to serve? I have always used BC, fondant and royal icings, so I'm kind of lost! If anyone has a picture of a Cream Cheese frosted cake I would LOVE to see it!
One of my cakes in the gallery my version of wilton's "Hearts & Roses" is iced in cream cheese icing and some of it is even sugar free
If you look in my photos as well, I have a practive cake made with cream cheese frosting. It was so yummy tasting.
Thank You! Which recipe did you all use? How was the icing to smooth? One more question, Did you charge more for this kind of icing? I think I better make a practice one!
I used the Wilton cream cheese icing recipe, but replaced 1/2 tsp of the milk with vanilla extract, and it was delicious!
I live in LA, so it is very humid here and I have lots of problems with my icing in the summer, especially icing made with butter. It was so soft and runny. I had to add meringue powder to it. I couldn't use my normal smoothing method with it, 'cause it didn't really crust, so I just had to ice it as smooth as possible with my spatula.
I don't know if most people have these problems in the rest of the world though! It seems to be harder for those of us who live down here in the humid swamp land!!
Thanks Melissa! That answers most of my questions!
My one and only posted cake is made with a crusting cream cheese frosting. It was very easy to work with.
