I just need some advice from all you wonderful ladies. I am making a 3 tiered chocolate cake for Sunday. At present I am doing 12", 9" and 6" cakes. I was not going to torte these cakes I am wondering whether they will be high enough. The tins are 3" high. Will these tins be high enough ( needs to feed 65 people ) or should I do each tin twice and increase the height minus the 6" pan. I could torte each then but find it hard to torte a 12" pan. sorry for rambling just seeking advice. Thanks
if you fill them 2/3 full and they rise up to the top, then you can torte twice, each with a 1/3 - 1/2 inch filling. if you have a hard time torting the large one, try this trick. take a long piece of dental floss...wrap around the cake all the way, cross it and pull to each side. the floss will cut through the cake pretty evenly. then to pick it up, slide a cake cardboard underneath the layer and separate it. fill and then replace the cake by sliding it back off of the cardboard.
