I posted earlier about the pillow cake and have another related question. She said she might want the layers filled with something like strawberry or raspberry, or chocolate. I have never done fillings before. Can I just use a high quality jam? What to use for the chocolate filling? Should I refrigerate for a while after filling to firm it up? TIA for info!

Oh! One more thing......... ideas for fondant brands. I have used Wilton and just don't like it, although it handles VERY nicely. I have also used Pettinice and had a disaster with it (not sure if the problem lay with me or the fondant icon_confused.gif ). Any brand info? Preferences? Something that handles easily, doesn't crack or tear easily, tastes great. FondX or Satin Ice? Should I just use MMF (that means marshmallow fondant doesn't it? icon_redface.gif )

MMF is great, easy to handle and tastes great.
A lot of cake decorating stores sell good quality fillings.

I made a cake with a raspeberry filling not too long ago. It wasn't hard to make.

i use fondx and it taste like MMF i also like satin ice but fondx is my fav
