I usually only make IMBC for my cakes, because I love it and so does everyone who tries it.
My question is--since it has egg whites as its base, I have always always kept it, and any cakes it covers, chilled. Then I read somewhere (Colette's book I think) that cakes frosted with this "will keep at room temp" for like a day or two. ![]()
Is this true? Has anyone tried it? If it can sit out, I'd like to be able to tell my customers yes or no, but so far I just tell them they *have* to keep any cake with IMBC in the fridge except to eat it, tho it tastes best at room temp. I know leaving one out for a party is fine, but what about the "overnight on the counter" thing? That just seems wrong, considering the ingredients in that icing...
Any thoughts or advice here would be appreciated!

check out this site........they say couple of days
a couple other sites I saw said up to 3 days on the counter unrefrig. and up to a week refrig.
