You use a crusting buttercream and allow it to crust a little, then lay the viva on it (because it has no pattern) and smooth it with your hand or spatula. There is a tutorial on CC but it's listed as fake fondant I think. The tutorial leans more toward a rounded cake, but I'm certain the method will work on your cake as well...but again, I do whatever I can to avoid a 'smooth' cake. Basketweave, corneli lace, you name it! if I find it, I'll attach it in a minute.
Ok, here is the link....http://www.cakecentral.com/article10-How-To-Create-Faux-Fondant-The-Paper-Towel-Method----Viva.html
I don't use the special tool recommended - but I think many CDs do use something of the sort. Try a search in the forums because I've seen a lot of posting about this before. Good Luck!
maybe i just havent figured it out yet, but I think I like using parchement paper better than viva...I find with Viva I can really move the buttercream (which I dont want) if I am sliding my hand over it...yet with the parchement it really doesnt seem to move....I dont know if this makes sense...and maybe I am the only one...everyone seems to love Viva.
