Okay I saw a post on this a while back but cannot find it. How long can you leave cake batter out before you fill the pan? dunce.gif I ask this because I have beed asked to make a cake in a hurry, today for a party tomorrow. I need to make 4 - 6" cakes and only have one 6" pan. I could run out and buy another pan, but my dd's are not feeling well and I do not have anyone to watch them. Would the batter be okay to bake one at a time??? TIA.

I always stick mine in the refrigerator until I can bake it.

You can fill up the pan and throw the bowl of batter in the fridge and it will be just fine. They have shown that you can actually refrigerate it overnight and it will still bake up ok if you are using a mix, or a doctored mix. Scratch cake, I don't know if you could go that long, but you'll be fine for what you are doing today!

As long as the temp is not hot, the batter will be fine. It shouldn't take more than a couple hours to bake 4-6" cakes.
