I am going to be traveling 9 hours with a wedding cake. My plan is to freeze (iced in BC and covered in Satin Ice) the cakes to help keep them cool for the long drive. Basically, the will be taken from the freezer on a Friday morning and the wedding is on Saturday afternoon.
The only decorations will be gumpaste bows and fabric ribbon which I will attach later during set-up. So it will be just the BC and satinice that is frozen. I have read alot about condensation...any ideas?
BTW...Satin Ice says freezing is fine.

We will have good AC in the car also.

A cake iced in B/C with fondant would be fine set out even for a couple of days, my only concern pulling out the cake from freezer is the condensation having time to dry out completely. The other thing is that sometimes "pockets" can form under the fondant from the moisture, which you would have to pop with a pin and hope it doesn't create a sag place. Depending on your design of course this could be covered with a flower or ribbon etc...It certainly can be frozen, but allow enough time to dry out. You also have to think about your boards getting excessive moisture, unless you use the plate system. In traveling, use the non-skid mats, and maybe some foam to cushion the ride, if cakes have moisture they may try to slide a little. I am sure there are others that have more to say on this.

you can also place the cakes in those disposible ice chest that are made out of styrofoam that would keep them cool the whole time during the drive

I did basically the same thing, although it was with a far less important cake (just a birthday cake for a friend's son). I had 2 layers covered in satin ice. I froze them both, then took them out in the morning, put them in boxes (I didn't put any wrap or anything directly on the cake) loaded them in the car and drove for 7 hours. It almost killed me not to check on them on the way, but I was worried the more I looked or messed with them to more likely I'd create some problem. I took them in the house that night, and assembled them the next morning for the party. I had NO problems with the freezing/thawing at all.

Cupcake totally has is right on this! I would be very worried about the bubbles and the cakes sliding!

I actually just did this a couple days ago. I have frozen my cake and then put the fondant over it and when the cake started thawing the fondant was sooo wet! I freaked but then realized I could put it under the fan and that took a couple of hours! I would recommend not freezing the cakes. You can have cake out for a day or two without being frozen because all the sugar preserves it!
