Pre Frozen Wedding Cakes And Frosting Roses- Help!!!!!!!!!!!

Hi everyone! I am getting married this weekend and I am doing my own cake on Thursday. All my cakes are pre made and frozen. Also, I made roses for the bottom borders of each cake and tipped them with gold lustre dust and froze them. So I don't create moisture on the frosting roses, should I apply the roses to the border when they are still frozen and make that the last thing I do, and then immediately put the cake in the frig? I am a nervous wreck over this cake. Each cake is on it's own seperate plate also. Being that this cake will sit in the frig for 2 days before the wedding, I am worried about moisture on the cake and roses. Someone please respond!!!!!! icon_confused.gif

I am not sure about this specific cake, but I usually have a fan blowing on my refrigerated cakes to remove any condensation...or have it in a very cool and dry room. As long as it is not coming to temp. outside, it should be fine.

You should be fine, Thawing in the fridge helps cut down on the condensation and once it comes out of the fridge just be sure to let any condensation dry out before handeling the cake. Good Luck and congratulations.

Congrats on the marriage !!!! And you will do fine, just breathe...I have let my roses thaw on the cake (although my flowers really have a lot to be desired) I also set a small fan in front of the cake after I take it out of the fridge to minimize the condensation build up on the frosting. But you will be ok!!! Good luck!!!!! And post a pic!
