I have used the packaged Wilton fondant for several wedding cakes. The problem I have is that I have found this product to be not the best tasting. In fact, I try to discourage those wanting it on their cake from using it. It does make a very elegant looking cake. I have also found that it is not the easiest to serve.
Any suggestions?? Snooks

MMF, or marshmallow fondant. Tasty and cheap. Do a search in the forums and you'll find a wealth of knowledge!!

....wilton is horrible and MMf is not much better. I use Fondx or you could try Satin Ice. They are just kind of Vanillaee.....is that a word????lol

The general reply will be MMF. I've never used it but it gets rave reviews here. I flavor the Wilton stuff with candy flavoring and it tastes much better. I have also tried rolled buttercream on cookies and it is delicious. Tastes like regular BC but rolls like fondant, a little more fragile but manageable.

Sorry to go OT, but I figured this would be a good opportunity to ask about the commercially available brands of fondant.

I posted a while back about how I tried to make "regular" fondant using a recipe on this site that called for gelatin, glucose, and glycerin and how it came out without much strech and elasticity. The replies I got were that this is just the way regular fondant is, and that it doesn't have near the stretch that MMF has (which is what I've always used).

So, my question is: Are the commercially available brands of fondant the same way, or do they have more elasticity, similar to what MMF has?

hhmmmm...mmf does have a lot of stretch because it's primary ingredient is marshmallows. Commercial grade fondant can be rolled out extremely thin, to give the effect of tissue or a blanket. I guess it depends on the volume of cakes that you do. Commercial fondant, you can buy in a 10lb bucket for like $30.
