Thawing Cakes, How To

When you thaw your frozen cakes do you thaw them on the counter or in the fridge? Covered or uncovered? and how long do you usually thaw before icing?

I wrap the cooled cakes in saran wrap and then aluminum foil before I freeze.

To thaw, I take the wrapped cake and leave out on the counter on a cookie sheet in the full wrapping until it's thawed. I will often take it out at night before I go to bed if I'm going to decorate in the morning.

By leaving it in the wrappers, there is no condensation on the thawed cake. I have done this tons of times and it works perfectly.

I guess it depends on the thickness of the cakes.

I use the 3" high pans and the cakes rise all the way to the top so it takes mine more than a couple of hours to thaw completely. I torte twice so mine need to be quite thawed before I can make a nice cut.

If you bake thinner cakes, of course they would thaw quicker.
