Good Filling For . . .

Looking for a good filling to put in a carrot cake. Don't want to use cream cheese since I will not be able to refrigerate.

This is for a practice cake (DH and his fellow workers will be testers! icon_lol.gif ). Going to try my hand at FBCT on this one.

Don't usually use fillings, so any help is welcome.

A SPICE OR RUM FILLING WOULD DO GOOD

a caramel type filling or maybe butterscotch?

Oooh, the pineapple sounds yummy!

How about one of those sleeve fillings that don't have to be refrigerated? I think those come in pineapple, too.

there's a restaurant down in Indianapolis that has the best carrot cake. they have a butterscotch filling and drizzle on it. They have cream cheese icing on it too, but the butterscotch adds a great taste. maybe try a butterscotch ice cream sauce mixed with some buttercream?
