Suggestions For Filling In A Butterscotch Cake

I am making a cake for a baby shower on Saturday. Mom-to-be (one of my girlfriends) requested a butterscotch cake. She didn't care what kind of filling it had. I was thinking Peanut Butter Cream, but thought it might be a little on the rich side. I am frosting it with buttercream, so I could always use that for filling, but was hoping for something more interesting. Any ideas?

I also think peanut butter would be to rich. I would stay with the buttercream. I don't know if this would work but could you chop up butterscotch chips and mix in with BC. I don't know how it would taste just a sugestion

I also agree that PB fillling may be too rich (though it sure does sound yummmmmmy to me!!!). How about buttercream filling with butterscotch syrup (like you'd put on an ice cream sundae) swirled in?

cakebyjess that sounds really good also. I think a taste test is called for. I think the syrup is on the nose though. Or how about carmel syrup??? What do you think? To rich still??

we used to make a "pour over" syrup for spice cake and I made some recently for a butter pecan cake, I mixed it with my icing for a filling and it turned out very tasty.
It's 3/4 c. brown sugar, 1 tsp. vanilla, 3 tbl. butter and a little milk. Heat it until it thickens, cool it and mix with icing.

jscakes would that have kind of a carmel flavor?? My aunt used to make homemade syrup and that sounds similar to what she used but that was over 30yrs ago so can't remeber the flavor to much only that it tasted so YUMMY for a 10 yr old. icon_wink.gif

Ok where do we meet for the taste test?? I am kind of in the middle NE. I have BC No Butterscotch chips or syrup on hand. So who else can host this tasting????? I am at a lose this weekend no cakes so far for practice on family. So I might just have to try this out on my guinee (spell check) pigs who have to have cake. Wal-mart here I come. Ideas got me HUNGRY. And i don't usually eat cake but these ideas got my tummy grumbling. icon_cry.gificon_razz.gif

So cakesbyjess just noticed your a greys anatomy freak also. I watched all the episodes tonight to catch me all up. I missed a few last year cause of DD dance classes. I also can't wait for the new one 6degrees How about you???

What about a cookies and cream filling, using coarsely chopped Nutter Butter cookies in the buttercream?

Good idea not alot of PB to be to rich and alittle more on sweet side.

OMG ... I am soooo obsessed with Grey's Anatomy!!!! I have cried during episodes more than I'd like to admit! icon_redface.gif I also think that Six Degrees looks like a good show ... looking forward to it! icon_smile.gif

I just used a recipe I got from here, sorry can't remember who posted it - it's unbelievably easy:

1 8 oz. pkg cream cheese (room temp)

1 7 oz. jar marshmellow fluff

Whip marshmellow fluff by lge tablespoons into cream cheese until light and fluffy. Added some vanilla and creme bouquet extracts.

Tasted like caramel to me, or maybe brown sugar but it sure was tasty and had a great consistancy.

Oh, and it does need to be refrigerated.

That tastes like caramel? I sure do love marshmallow fluff....I could eat a jar of it with my finger.... I mean I've never done that icon_redface.gif but I'm sure I could......
