I'm new to this site and your"addictive" warning is understated. I haven't worked with fondant other than the giftbox cake from Wilton's courses, (Looked great but no one liked the taste of the fondant) Are the home made fondants really any better tasting? I'm making a baby shower cake soon and hope to use fondant decorations on a buttercake cake. Is that o.k.? Can you make the fondant decorations in advance?If so, how long in advance?Any suggestions ...I'm really insecure about decorating.Everyone else thinks I do a great job but from my point of view it takes me much too long and I very uneasy about each cake.

Many people really like (love) the MMF. I am not one of them. It is just too sweet. I like Pettinice. Tastes good, works beautifully and best of all no mess in the kitchen. I pay about $20 for 5lbs, which is more then you will probably need. Just wrap it up tight with Press and Seal and it will last forever.

You can make your fondant decorations several weeks ahead of time and let them harden. Most people probably won't eat them, so you might as well finish up any leftover Wilton you may have. You can try mixing in some candy flavor to see if that will mask that "Wilton" flavor. Honestly, I think Wilton must be brain dead to continue to make that nasty stuff.

How would you store the decorations if you made them in advance?

I love to make marshmallow fondant -- you can flavor it with any Lorann oil, and while it is very sweet, at least it doesn't taste *bad*. The best part is, it costs me less than $2.50 to make 3 lbs.

I've never tried attaching fondant decorations to a buttercream cake, but I know others have. I wasn't sure from your post if you were referring to fondant decorations affixed to the sides of the cake (like flowers) or figurines that sit on top of the cake and no one would eat.

I've made MMF before and I find that most people HATE it...I just recently worked with Satin Ice and I LOVE LOVE LOVE it...except its pricey. I think the key is to roll out thin so its a mild taste.

Drops to taste.

Fondant decorations last forever in a cool dark place. NO HUMIDITY!
