My timing question is: Is it ok to bake cakes say on Monday, decorate tuesday and present cakes on Wed?

Absolutely! I usually try (I will emphasize the word TRY) to make my cakes at leats 2-3 days before they are due. I like to wrap mine up and freeze them as they are easier for me to handle. Then I decorate the day before and let sit until delivery.

Oh sure. I bake Sun and Mon, sometimes a week in advance if I'm at all organized. Cool, torte, wrap and freeze. Then I fill (No crumb coat) and wrap on Thursday, let them thaw and settle, then finish, assemble and decorate on Friday. Deliver on Saturday.

Your management of time depends on your workload. If you have several cakes going out on lets say Saturday, you can bake Wed. and freeze. Anything with B/C can be decorated and set out at least 48 hours ahead. B/C seals in the moisture of the cake, so it will be fine, this, of course is allowing for a non-refrigerated filling. Only you know how long it takes to do certain cakes, so allow for that time. I always try and have my orders done at least several hours before a customer picks up, just to allow for any glitches I may run into. On wedding cakes for Saturday, I do most of my work on Friday so the cakes are done. If it is a late P.M. wedding I will do some final finish work on Sat A.M. I always leave myself plenty of time to get to location and set-up. I would rather be done in ample time then to be rushed, it seems like in those cases is when you will have problems it just seems to work out that way.

At a wedding a few weeks ago, I had a woman come up to me and tell me that was the BEST cake she had ever tasted, adding that she is pretty particular about her cakes.

I had baked the cake on Tuesday for the Saturday wedding.]

It can be done.

I baked a cake on Thurs, decorated and took to work for someone to take for Fri morning camping. When she cake back a week later she said they never got to eat the cake and it sat out until the following Fri and she said it was delicious and so moist. I wouldn't recommend 1 1/2 weeks but it does work. I also baked a cake on Wed, iced and covered in fondant for a Sun party. Fondant is like a tight seal that cake was so fresh.

I have baked a cake on sunday, monday torted, filled, Tuesday crumb coated, covered in fondant & finished all decorating and wrapped well in plastic wrap then put in the freezer. Took out the frozen cake & put directly into the fridge to thaw for party the next day. I have don't this a few times and not one did I get any complants. In fact I got so many compliments on how good it was. icon_smile.gif
