Cupcakes - Use A Specific Cupcake Recipe Or Same As Cakes?

When you do cupcakes, do you use a special recipe just for cupcakes or do you just put your cake batter in cupcake tins?

I've been noticing that some cookbooks have special cupcake recipes, a few state that it's better to do this than to use cake batter for cupcakes. Some cookbooks say to just put the cake recipes into the cupcake tins and it will work fine.

Is there a technical reason why you should consider a special recipe for cupcakes that's different from a cake recipe? How do you do it?

For my standard cupcakes, I just use the same batter as cakes. Of course, they bake a little different in small cupcake tins, than as a whole cake, but it works just fine for me! I'm interested to see what everyone else has to say!

i don't do cupcakes very often, when i have i've used the same yellow cake recipe that i use for cake. it worked fine, but i know that in the WBH book she lists twp specifically cupcake recipes. maybe there's a difference?

I make cupcakes often, and have always just used my cake recipes. I am also curious about cupcake-only recipes. icon_smile.gif

Same batter. With scratch cupcakes it can be a little tricky, cause you aren't cutting layers that can be soaked with simple syrup to keep them moist.
