When I write with royal icing on parchment to be placed later, my words or letters are so brittle they almost always break. What am I doing wrong? I've tried making them a little thicker but they still break.

You're probably not leaving them long enough to dry and possibly taking them off the paper clumsily. The best way to get them off is to slide the paper to the edge of your counter and then pull the paper edge down towards the floor slowly so that you're peeling the paper away from the icing and not the other way round - hope that makes sense. With very tiny letter if you can be brave it's probably better to do it straight on to the cake and pick it off if it goes wrong.
