I have my first wedding cake this weekend. It's a fondant covered cake with a little piping on the fondant and a bead border plus fresh flowers. I was planning to do the piping/border in buttercream but I'm wondering if it would be better to do it in royal? The cake will be outside in an unairconditioned tent, and it has been pretty humid here lately. Personally I don't like the taste/texture of royal icing, but don't most guest just peel off the fondant anyways? What would you do - buttercream or royal?

Thanks!

Debbie

I would use royal. Try antonia's icing from the cookie tutorial on the homepage. It is much better than regular royal but you may not even want to go to that much trouble since most people probably won't be eating the fondant anyhow! And remember-don't stick the flowers directly into the cake unless they are pesticide free. You can use flower picks or I would even use contact paper to cover them if they have to go into the cake. Good luck to you!!

I would probably use buttercream. When I made my present cake for course 3, I put a little stripe of royal on the bow as an accent. It dried so hard that it cracked and started falling off. I wouldn't want my decorations to start falling off, but maye it depends on if the cake is inside or outside and what the chances are it will be bumped. Just my opinion, I would do buttercream
