Need Help With Cream Cheese Frosting Please

Does anyone have a tried and true cream cheese frosting recipe they could share?
I need to make a carrot cake for a big party next weekend and I am dreading the frosting. I made an awesome carrot cake a couple weeks ago but the frosting gave me fits! It was a simple recipe with cream cheese, butter and sugar ... but it was horribly runny no matter how much more powdered sugar I added. I ended up with enough frosting for 5 cakes LOL but it was still severly lacking IMO.
I am looking for a nice light fluffy cream cheese frosting recipe that will stand up well on it's own. This past one was horrid, I needed to freeze the gosh darn cake to keep the icing on it and then my dinner guests had to eat almost frozen cake. Everyone raved about the taste of the cake but I was so disappointed in the frosting.
Would shortening maybe help?
I used to have a cream cheese recipe I loved and was awesome but I can't find it to save my unorganized soul icon_cry.gif
Any help would be greatly appreciated!

4 cups powedered sugar, 8 oz cream cheese at room temp, 2 sticks butter ( 1 cup) at room temp , 1 teaspoon of pure vanilla extract and 1 tsp of buttermilk.....make a very yummy cream cream frosting, this is the recipe I use all the time!

I *think* this might be the recipe I used before or one very similar but maybe I somehow messed it up whe I made it before.

I have a crusting cream cheese recipe that is to die for! I got it from someone here at this site. This will frost 2 cakes. (9"rounds)

Crusting Cream cheese

1 cup solid vegetable shortening
1/2 cup butter, softened
1 pound cream cheese, softened
1 tablespoon clear vanilla extract
3 1/2 pounds powdered sugar



Cream butter, shortening, cream cheese and extracts. Gradually add confectioner's sugar and salt. Beat on low speed until nice and creamy. If you want whiter icing, try to use butter without dyes available at most health food stores.

This recipe is for a stiff consistency. For a thinner consistency, use 3 pounds of powdered sugar instead.

If you want a very smooth cake, let the cake sit for 15 minutes after icing. Then smooth with the non-printed side of a Viva paper towel.

i've used a cream cheese recipe very similar to this one too, with the crisco, etc. and it's very good. mine crusted very quickly though, and i had to smooth it pretty much as soon as i got it on the cake. hope it works for you!

I made the crusting cream cheese icing recipe yesterday!! It is thumbs_up.gif Wonderful!!!! I made it for a friend who is picky about icing, not a fan of regular buttercream.. esp all shortening... She loved it and told me never to make another kind of icing! LOL So that says a lot. I put it on a Devils food cake... came out great!!

thank you mrsfish94! I tried the crusting cream cheese frosting this weekend on my carrot cake and it was awesome! amazing taste and it didn't melt and run all over the place. exactly what I had been looking for! thanks again

mrsfish...in the directions you said to add sugar and salt, but in the ingredients you didn't mention salt...how much do you use? This sounds delishus!!
