Mmf Issues

The issue is I was able to make it once, my very first time amazingly and it turned out perfect. Every. Single. Time. afterwards it's turned out awful. I follow the recipe to a T (the one from the tutorial from this website) and every time it's dry, hard and I can't even kneed color into it much less roll it out and use it. The Spongebob cake I made last week was supposed to be covered in MMF but I couldn't get it to come out right. I made it twice and it was hard and nasty both times, like a big white marshmellow rock. The second time I was only able to barely use 3/4 of the bag of sugar because it got so hard I thought my mixer was going to explode. I tried to kneed in the last bit but it was so hard my wrists couldn't take it. The only thing I can think of is I have to microwave my mellows several several times before they all melt. Could I be over-cooking them, is that even possible?

I have been over this a million times and I can't figure out what I did the first time for it to come out perfect that I'm doing differently now.

I know there has been alot of dicussion on if all the sugar needs to be incorporated. Sometimes for me it is all of it sometimes all of it does not get used. I would add the sugar until you feel the right consisitency has been acheived - you dont to put all of it in necessarily. Also if your marshmellows are fresh you should not have them harding up on you. Dont forget to add your water and then I only melt them 30 seconds at a time stirring inbetween.
