to add flavoring to Wilton fondant? I thought I had read about it on a thread on here but I can't find it now. I figure you probably can't since a lot of decorators on here make their own but then I thought that maybe most people make theirs simply because of expense too. Thanks!

You can definitely add extracts/flavorings to Wilton fondant. I know I make mine not necessarily because of cost (that is part of it though) but taste. Even with flavoring I still don't care for the wilton stuff.

I really want to make a cake with fondant. I guess i'm just being lazy and not wanting to actually make it. I guess I will try to flavor it and see what it tastes like. I've never tasted it flavored or unflavored so I guess it's time I did. It won't make me gag will it?

Would it be best to use some type of candy flavoring or just vanilla extract?

I just did my first fondant cake yesterday! I'll post it in a bit. Anyway, I just bought a small package from the local decorating store. I just colored it with the coloring jell stuff that I use in my frosting. I don't know if this is what I should have used or if there's some special colors that are supposed to be used. Anyway, a lot of kneading later, the color came out and I think it turned out kinda cute! I definately want to try making MMF, now. It was a lot of fun to play around with that stuff!

Nah, won't make you gag! It's not that replusive it's just there a tastier alternatives out there that's all! Peppermint extract would be good too! Use regular extracts and the same colors you use for your icing and you'll do just fine. Have fun!

dodibug,
Thanks for your replies. The way everyone talks about Wilton fondant, I was actually afraid of tasting it and throwing up. No kidding! I think I am going to try MMF again. The first time I made it, it was a disaster but I am going to bite the bullet and try making it again I think.

I used wilton for the first a few weeks ago for a modeling and fondant workshop. I though I was going to gag from the smell alone. And of course had to taste it. I couldnt get it out of my mouth fast enough. I have used Pentenence, Satin Ice, Choco Pan, and Fondx. They are all much much much better then wilton. I would not use that stuff again. And if you are going to eat what you use the fondant for, dont use wilton.

I have a friend who gags at the Wilton fondant. I tasted it once just to see, and I didn't think it was that horrible. MMF is definitely better by far though.

It is best to use candy flavorings because they are oil based and more concentrated so it won't make your fondant sticky by adding enough to taste. Yes, the Wilton has a bad reputation for tasting bad, but I think what most people are turned off by, too is the texture. To me, it is like chewing gum that does not bond. I don't get that effect with MMF or Satin Ice. It is, however pretty forgiving and easy to work with. Good luck with it and I hope you find the world of fondant fun.

Ok - newbie here....I give up. Someone please tell me what MMF is? All I've ever seen or used is Wilton. You mean there are more choices out there (becuz it's plain nasty).

MMF is marshmallow fondant. You can find a recipe here on CC. Just do a search in the recipe section. It is very tasty and easy to make. Just make sure to add the powdered sugar very slow.

Ooooohhhhhh. so maybe my first and only batch of MMF turned out as hard as a rock because I didn't add the conf sugar VERY SLOWLY. LOL. I had no idea. I haven't used it yet. I made it about three nights ago and wrapped it tightly in two layers of saran wrap and it's still sitting on the kitchen counter. Every once in awhile I walk up to it and knock on it (no kidding). It's THAT hard. I hope I can redeem it when I go to play with it in a few days. I've heard microwaving it for a very short time will soften it up. Thanks so much for the tip on adding the sugar slowly. I'll try that next time. I hope doing MMF is as easy as everyone says cuz for me the first time was not pretty.

I, too, had a disaster making the MMF. But I am willing to try it again, now that I know what I did wrong (pretty much the whole process). Wilton is nasty. I let my kids play with it when we ran out of playdoh once.
I'm also going to try the chocolate ganache this weekend, just for fun.
Good luck, Dordee!

This might help with the mmf:

I have found that i don't always use the complete 2nd lb of powdered sugar though.

I usually don't either. You just have to watch the consistency as you put in
the powdered sugar. If it is looking the right consistency stop putting the powdered sugar in.

I really wanted to try the MMF, but I don't have a KA and my sunbeam doesn't have a paddle attachment. Have any of you ever done the MMF by hand? Is it worth it, or should I just buy fondant until I can get a KA?

I've seen instructions where it is done by hand. I guess it would be a bit sticky and more messy, but you could do it.

You can do it by hand you just have to be careful and Iwould use a heat resistent spatula well greased to mix while the marshmallows are liquid.

I make MMF by hand since I don't own a KitchenAid yet and my Sunbeam can't handle it. Just use a durable spoon or spatula to mix until the marshmallow is incorporated then use your hands to mix in the rest of the powdered sugar. Just make sure to completely coat your hands in Crisco first though or it will stick. It takes me about 15 minutes for one batch.

My 9 yo daughter and I made MMF for the first time a couple of days ago. We greased the bowl and spoon and didn't have any issues with it sticking.

We also used a lot of elbow grease. icon_smile.gif
