I am trying to make some shells and coral for a beach themed cake, but my white chocolate has a yellowish tone. I added a little violet color and it helped some, but not enough. Are different brands of white chocolate whiter than others? How can I get rid of that yellowish tone?
You really can't. All real white chocolate will have a yellow undertone to it. Perhaps candy melts, like Merckens or even the Wilton ones, would give you more of a true white.
You can "paint" them to a pretty white shade using super pearl dust dry dusted onto them--don't mix the dust with anything. It may take a few coats.
The other option is to use Merckens Super White candy coating. That's about as white as you can get, but it's still not a true bright white.

at hobby lobby and party city here, there is a candy melt brand called make n' mold and its package title says wedding white. its a 2.5 lb bag for about 6 dollars. its a much brighter white than wiltons white candy melts or white chocolate chips. i used them for this cake, and i agree that you can dust with super pearl dust. i dust it on dry. you can (if you want) also dust with color

you can see the paper that it is placed on is white, and the chocolate next to it, is pretty bright in comparison.
