Cream?

On the chocolate ganache recipe, it calls for 'cream'? Would that be heavy whipping cream? Can you use this for a filling or icing?

yes and yes!
After it cools, if ya whip it, it gets lighter and fluffier...good for between layers!

Hi,
When I make ganache I use Whipping cream with 40% fat and cream above 30% fat would do. If you use a coffee cream which is 12% fat then you may have to add butter to make the ganache rollable.

I am not sure if you could add cream with less fat content than 30% for pouring ganache and get it firm. Never tried with anything other than whipping cream.
