How Do I Make A Molded Number Cake?

I bought the party n more stand and I'm using it for my daughters 3rd birthday. The plan is that the smallest (8") tier will be the #3 molded. I want it to be pink and girly and sparkly and wearing a tiara. The party is being held at a park. I'm concerned about it standing. What kind of cake? Should I freeze it before I mold it? Do I need to put a dowel rod down the middle? Any and all advice ont his would be really appreciated
