Sometimes my layers end up not being straight, I think it is from the frosting process. Do you think if I were to insert some dowel rods before I frost that they might help to keep the cake straight?

I actually tried this. Because I can't cut straight or keep the dowels even I had to remove them. I was using the wooden dowels. I want to find the big tea straws & try them.

I think the dowels are going to interfere more with you when you go to frost the top than they will help. How about chilling the cake to solidify it before you frost it? Ir do a crumb coat and chill that? The shell should hold things together unless you have way too much filling, which is going to be a problem down the road anyway.

I had lots of trouble cutting dowels straight until I bought a pair of Fiskars pruning shears at Wal-Mart. They work like a dream! I can now cut a straight dowel.
