I have not baked alot of them my years but need to now.

I want to make them in the jumbo cupcake tins for individual servings.

Can most cheesecake recipes be baked in this manner??

Yes you can. They don't take very long to bake. I believe I do them at 300 for 17-20 min. Careful as it depends on the type of pan. The black nonstick pans cook faster and it also really depends how much filling is in them. They should be firm but the center should still jiggle. Getting them out without ruining them is the tricky part.
What I do is spray the muffin tin with nonstick then I cut (1 or 2 per cup, I use 2 each cup)1.5-2 inch strips of parchment about 5.5-6inches in length and place in each cup. They will hang over the edge of each cup. Then I put in my crust (if using one) and filling. When cooked and chilled the parchment strips make it easy to remove without destroying them

I will tell you that I bake mini pineapple upside downcakes in those tins. I use cake release to grease them and those sticky cakes slide right out of there.

I think I'll try that with the cheesecakes too!!
