In Pastry Class we were taught to SPS (Spray, Parchment, Spray) and I used to always Crisco and flour. I had some problems before, but since I have learned this method I have never had a cake stick! So, I've never gone back, since I'm now doing it for pay, I didn't want to chance it. But, I truly think its just ones own comfort zone. Ya know?
