I made a 2-layer 8" cake, covered with chocolate mmf and filled with strawberry/cream cheese filling. I think I've read that you shouldn't put a fondant covered cake in the fridge but I'm thinking that the filling should be refrigerated. I just put it together today and it's being cut tonight, so I'm mainly concerned about how to store the leftovers.

Does anyone out in cake land know????

I have left my creem cheese filling cakes out for several hours and not had a problem. Cake insilates really well, and if you do put it in the fridge, give it a coupe hours on the counter to soften up before serving and you should be fine. I don't know if there are some other kind of rlules where the fondant/ cream sheese are soncerned, this has been my experience though.

You can put a fondant covered cake in the fridge but when you take it out don't touch it until the condensation dries on it's own! Also if you have any type of stand up decos they will wilt.
