Can someone tell me the best method of doing this?

What I do and seems to work out really great for me. Is I pick the font I want from like microsoft word and type out what I need it to say. Lay it out on cookie sheet and cover with wax paper taped at corners. Write out folloing the print out and put it in the freezer and there you go very nicely writen saying! I used a piping bag with a very small whole. Poured the melted chocolate into the bag. Practiced a little on some parchment paper and went to town, in other words, hoped like heck I didn't mess up.

It is the cake with the chocolate covered strawberries and ganache around the edge in my photos.

Probably no help to you, but it is one of those things you have to go for.

I just melt chocolate in a bag and write,, you can use the pin prick method.. what I would do is find the font type and size you want on the computer.. print it out prick it (trace it) with a pin Making little holes so on the back side it feels like brail along the letters but out the words.. ie.. Happy and place it on your cake rub gently so that the prickly part leaves and imprint on your cake.. pull up the paper then you have a dotted line to trace over with your chocolate. This works nice when you want really fancy letters..

Thanks everyone for lending your expertise! Your answers were exactly what I was looking for. I have to make some cupcakes and I plan to put some wording on top of each of them.

Silvercat-thanks so much and I think this is the method I will use for this project.

Tnuty-thank you for explaining the pin prick method to me. I have always wondered what people were talking about when stating that they used that method on their cake. This info will save me from posting another topic!
