This Heat Is Wreaking Havoc On My Cake-Making!

ok so I had two 1/2 sheet cakes to make for this morning and then yesterday I got an order for an 8 in cake from someone else, same pickup time. Also had an order for 2 pies (but that wasn't a problem).

Anyway, the butter is basically melting in this heat! Today's high was supposed to be 100' (It's 96' now @ 6pm so I'm sure it did). Anyway, I made these cakes last night. I put the first cake in the oven and while it was in, mixed up the 2nd cake. The first one came out and was just WEIRD! It didn't rise hardly at all icon_sad.gif So I started making a huge batch of frosting while waiting for the second one. It was really floppy and just not working out right.

Before I made the 3rd cake, it dawned on me what was causing ALL of this. The darned heat. The butter was just way too soft and so when I creamed it with the sugar, it didn't whip the air pockets into the butter thumbsdown.gif I've never let the butter get that soft before so wasn't really expecting SUCH a disaster from it. Now I know that on hot days like this, I need to take the butter out like 1/2 hour before I need it, no longer than that.

Anyway, after I made the 3rd cake, my confidence was way up and I was getting ready to redo the cakes when my 2 yo woke up. I had to go console him and fell asleep doing so. When I woke up, I only had 5 hours to bake two cakes and make up new frosting for all three, then decorate them all icon_eek.gif I don't think I've ever decorated so fast in my life! I felt like a grocery store decorator icon_razz.gif

It all turned out in the end. I didn't have time to take pics of the two 1/2 sheet cakes but I did get the pic of the 8 in red velvet cake (in my gallery)

Thank God it's all over and I hope they tasted as good as they looked!

Oh my what a stressful day..glad it all worked out..How was the nap..lol. Love getting those with the little ones

heh, well it was in the middle of the night actually icon_razz.gif I slept from about 2:30am till about 6:30am My little guy was already in bed and then woke up. I had thought that I'd have all the time in the world to work...until he woke up wondering where mommy was icon_sad.gif

I live in New Jersey and its been very hot and humid for the past few days. Last friday I made a cake for a baby shower and had to have the air conditioning on high all the time just so I could finish it. Later on before getting the cake in the car, I had to ask my DH to start the car, set the air conditioning full blast so that the car would cool down for a few minutes before I got the cake in the car.

Hi fellow Washingtonian!!

YES!! It has been SO hot around here! I am west of the mountains in Olympia, so we are really not used to such heat. I own a hair salon and you can imagine trying to keep the heat down with all the dryers going.....even with air conditioning!! icon_eek.gif

Anyways, I'm glad to know I'm not the only one having problems (not happy that you are too, but thought I was losing it!!)

I actually waited until 11:30 pm last night to start my cake so it wouldn't heat up the house too bad and it still was ruined!! I stayed up til 3am trying to fix it and finally said 'forget it' and went to bed. Woke up this morning at 4:30 and I am trying again so we'll see how this goes.

I also had to make a batch of buttercream, MMF and gumpaste to prepare for class tonight as I will be going straight from work!! icon_confused.gif

I did find a good recipe for bc in hot weather conditions. It is called, high humidity buttercream and so far, that IS holding up......

Anyways, hang in there...I am feeling your pain...... icon_wink.gif

This heat is kinda ridiculous right now for the area because many people don't have air conditioning here, including us icon_sad.gif I remember having a few hot days like this last summer too though so it looks like it's probably time to make that investment, especially when it comes to the baking. It's costing money in cake materials to be doing them over from all this!

sugarbakerqueen: It's nice to see another from WA, especially one so close icon_biggrin.gif I'm probably about an hour away from you. If you know where Centralia/Chehalis is, I'm east of there in a little town called Mossyrock.

So where is your hair salon? Close to the mall maybe? icon_biggrin.gif That's where I go the most is the mall area (capital mall), but sometimes around Pacific ave to get to Cash&Carry too.

What's this high humidity buttercream anyway? Sounds interesting icon_wink.gif

I'm not looking forward to tomorrow: baking day for the farmers market. We'll have both ovens on aaaaaalll day and if it's just as hot as it's been, I'll be in there taking cold showers quite often. I took 3 cold showers yesterdayicon_smile.gif

Of course I know where Mossyrock is!! And I LOVE Centralia...it is such a cute little town. We could meet for lunch sometime?? I love La Terasca. My friends mom is the cook and her and her sister are waitresses. Also, I love the Olympic Club.

Yes, my hair salon is near the Capital Mall. It is called Salon Venue and it is located between the Capital Auto Mall and Office Depot on Cooper Pt. RD. You should stop by next time you are in town and say hi!! (Beware, I am a hugger...) I just hired a fellow "cakie" who takes Wilton classes with me at Michaels, so I'm sure we could have PLENTY of things to talk about!!

you know, I'm way overdue for a haircut. I'm kinda ashamed to say it's been over a year (in April) that I last got my hair cut. I just haven't had the time and then forget when I do have time. It's stupid. At least my hair is pretty healthy. I don't put any styling products on it besides shampoo/conditioners and I don't use the blow dryer but still, it's all kinda the same lenth, which looks witchy if I wear it down. Do you take appointments or walk-ins? Also, do you do waxing?

anyway, I think I know where you're talking about. I've been to the Office Depot and to the IHOP over there...and Barnes & Noble.

Which one is la terasca? I don't think I've been there. I'm still a little new to the area and only get to Centralia once in a while. We go more to Chehalis for things...

Sorry it took me awhile to respond. I am getting ready to move and things arae crazy right now!

I work by appt. only usually Tue. - Sat. Haircuts are $50 and worth every penny! thumbs_up.gif Just like cake you get what you pay for....

Waxing? Yes. I just hired an aesthitician. She will be starting next week. I do facial waxing (brows, lip, chin) and she does body.

La Terasca is AMAZING!! It is right next to the railroad tracks in a tiny building that used to be like a Drive-in Dairy Queen or something. It's on the main road (can't rememeber the name) but if you take the outlet exit and go under the overpass toward the Olympic Club, it's on that road. YUM YUM!! icon_razz.gif

oh, that's ok. icon_smile.gif Next time I know I'll be up there and have the time to get my hair cut, I'll let you know. The waxing I need is brows and such. I've tried legs and that's too painful for me lol I didn't mind the bikini area so much. It was around the ankles that did it for me. OUCH! Should I call or just PM you here?

What all else do you have there then? Just wondering what I could get by with if I get the day off icon_razz.gif

I'll have to check out la terasca. Maybe next time I'm in town with my husband. We like to go to mexican places together. I think I know where it is. Harrison Rd, right? By the tracks that don't really get used?

AT the salon, we do nails (mani. pedi.), hair, waxing and massage.....yes, massage. AND my massage therapist is the BEST, AND she only charges $45 aan hour!!! The cheapest in the state I think!

I will pm you the number. Make sure when you call, you tell them you are a cakie from Mossyrock so I know who you are!!
