I have this order for a wedding cake in December and the bride wants Pure White Chocolate. It is a three tier 10" 8" 6" round cake and she sent me a picture and it also has a fresh flowers arrangement with orchids and black trailing twigs which she tells me the florist is to paint to get this colour. (Against my policy with fresh flowers but is her call) The cake will have to be delivered to the florist the morning of (1 hour away) to do the arrangement.
My problem is, I have never done one in straight chocolate. Would it not crack when it is moved especially if it has to travel. Also the risk of water on the chocolate at the florist. I wonder if she means ganache but unfortunately she is in Australia and I am in New Zealand and we are in contact at this stage with emails only. Also it is very hot at that time of year another concern.
Just wanted some advice before I email her back to get more info, to see what you all out there think and have done. Thanks

if she talking about white choc fondant it should be fine. i would just tell her that you are not reponsible for the cake after its in the florist hands that way you are not liable if the florist messes it up

Just a tip as well. MAke sure you take good pictures before it goes to the florist in case there is a problem. Then you can show her that it was fine when it left you! Good luck!

Can you post the picture? That might help us figure out what exactly she is talking about.

Is the florist using black food coloring to paint the twigs? I would be worried about "paint" coming in contact with your cake. If people get sick, they might all think it was your cake that did it.

If you drop it with the florist, I'd be sure to have the florist sign off on delivery, then take a photo before you leave.

ya take another photo at the florist just to make extra sure your cover. maybe you can talk her into letting you mae the twigs out of fondant

I would be very nervous about using painted stuff on my cakes. Also it depends on what sort of twigs the florist is going to use. Loads of stuff are poisenous and it looks to me like it will touch the cake. It might harm your good name, people are not going to say they got sick because of the florist

As for the chocolate, I will also do the cake in chocolate fondant.

I'm not sure if I can get white chocolate fondant here. I have seen Duff Goldman use it on his programme and I think that would be ideal. I have emailed the bride to get a clearer picture. Her mother who comes from here agrees with what I have said but I do want the bride to get what she really wants within reason. As you say if anything goes wrong it would be me that has to take the consequences.

I make my own choc fondant, in South Africa we call it chocolate leather. Pm me if you would like the recipe

I have never heard of taking the cake to the florist..... I would not agree to that........ Is the florist going to take the cake to the venue when she is finished ? Sounds like a disaster in the making.........In America, the florist goes to the venue and puts the fresh decorations on there. I would suggest using artificial " twigs"..... that would take care of the contamination aspect.... The picture looks like it is iced in butter cream. Does she just THINK it is white chocolate ?
