I took the CMD book from the library but there are so many recipes and I don't have time to make a practice cake so I thought I would rely on you doctored cake mix experts for advice.

Can someone recommend a tried and true doctored recipe for a chocolate (devil's food) cake mix so it doesn't taste so much like a mix?

I'm running to the store now so I can pick up the ingredients.

Thanks.

not a doctored mix, but it is 100% no fail - use the chocolate cake recipe on the back of a box of hershey's cocoa. just make sure you line the pans with parchment.

yep- that's what i use ALL the time for weddings and people just love it! If you want a richer chocolate flavor, make the recipe, then add a 1/2 cup of Kahlua, a box of chocolate pudding mix and an extra egg. Kahlua fudge cake is just a richer, more chocolatey variety of the Hershey cake.

I use DH Devils Food cake mix with the addition of an extra egg and a package (4.5oz) of Devils Food Jello pudding mix (dry). Add what is called for on the box. You can replace the water with buttermilk.

You can also a couple tablespoons of cocoa powder as well as a tablespoon or two of instant coffee to the mix.

I have used the DH devils food cake and added the extra egg, Choc fudge instant SF pudding mix and milk in place of water. It makes a really moist dense cake.

Can you double or triple the Hershey's recipe to make a larger cake?

I do it all the time. I have a 6qt kitchen aid, and i can triple it before it gets to be too much. You just have to watch when you're mixing in the water that it doesn't spill over the edge icon_surprised.gif

Thanks Sugarnut. I have to do an 11x15 chocolate cake and I think I am going to try the Hershey's. It sounds delicious!
