I hope I can ask this without confusing anyone. How do you determine the number of servings per pan size. For example, how do you know how many servings you can get out of an 11x15 sheet cake? Or if someone tells you that they want a cake to serve 50 people, how do you determine how big to make the cake? Is it all a guestimate? Or are there certain guidelines to go by?

I teach for Wilton, but their servings sizes are for dwarfs. if you go to Earlenes site in TX, she has done most of the work for you. I use her chart all the time and have much better luck! She also has lots of info on serving the cake, dealing with the bride, etc.
