I was wondering if there is a matrix out there to know how much cake will serve. I'm needing to make a cake for approx 30 adults and was thinking about using a double layer 9 in and 8 in but carved some. Will that be enough or too much?

Here's the chart from CC that shows the number of servings for different size/shape pans: http://www.cakecentral.com/article14-Cake-Baking-Cutting--Serving-Guide---2-in-Deep-Pans.html

If you have any of the Wilton yearbooks there is a chart in them as well. I use it as a loose guide.
