Mint Chocolate Chip Cake Help

I was in the grocery store the other day and noticed they have a new line of Jello Puddings..... Mint Chocolate Chip, Oreo Cookies and Cream, Vanilla Chocolate Chip and Chocolate Caramel Chip. Has anyone tried adding the Mint Chocolate Chip to a chocolate cake?? Sounds yummy to me, but only one problem..... I'm not sure how to adjust the cake mix when adding a box of pudding (never done this before). If I recall correctly, I think I've heard to add 1 extra egg and replace the water with milk. What about the oil? Does it stay the same? Do you add anything else to the cake mix like maybe mint extract? Could someone help me? I would love to play around with this recipe, but I'm scared to death because everytime I experiment in the kitchen I screw it up! icon_cry.gif

My rule of thumb when adding pudding to mix

1 pkg DH mix
oil amt on pkg
water amt on pkg
add an additional egg
add 1 box of instant pudding
add 3-4T of buttermilk powder ( I got tired of tossing out the milk), if the recipe calls for 1 c water, I normally add 3T, if more, add 4T
1-2t of extract

I've been wanting the new puddings out myself, let us know how it goes.

For a little something extra try making the cookies and cream filling using the mint oreo cookies. Delicious!

I usually just add the pudding to the mix and don't change anything else. Never had any problems. Give it a whirl!

I think the mint oreos sounds like a great idea, you could also mix in some peppermint patties or Andes mints. Let us know what you come up with. I LOVE Girl Scout Thin Mints and have been wanting to do something like this, I was going to use my buttercream for the frosting but flavor it with Lorann Creme de Menthe.

Ooooh, I'm going to have to go buy some mint chocolate pudding tomorrow. Maybe 1 box in the cake and use another to make a whipped mint chocolate chip filling? Chocolate ganache on top... mmmmmm....

I usually just add an extra egg. Mint extract might be good if you were going to just use a plain filling. It's just fun to experiment and see what you can come up with...

Has anyone tried the mint yet? I bought a box. It is actually chocolate pudding with tiny mint chips. I'm wondering how minty it will be...
