I finally went out and bought the foam roller... and I wanted to kick myself for not getting around to it much sooner. All I can think is all those wasted hours trying (and failing!) to smooth out my cakes with parchment paper. Within minutes it was smooth with the roller. Thank you Thank you Thank you Melvira!!

Don't you love it!!!!! Everytime I smooth a cake I say a little thank you to Melvira!!

I haven't tried it yet. I never remember to look for the roller when I'm at Home Depot or Lowe's. But if it works this good then I'm going to have to make a special trip to go get it. Smoothing out the frosting has been my biggest issue with decorating. Thank you for the push to go get it.

I don't mean to be a downer, but I just bought foam rollers at Lowe's and was so excited to try. This method does not work for me! I made a sheet cake last Friday night (let me tell you, this was the worst cake ever, problems right and left), frosted it, let it crust, and the rollers didn't help me at all! I tried the rollers over Viva and also directly on the cake.

I had to go back to my old method of a hot offset spatula but that makes the cake sort of damp, had to wait for it to crust again, didn't wait long enough, tried to use pin prick method to write and since it wasn't totally crusted messed up the smooth finish, etc. etc. I was up SO late.

How does everyone get Melvira's method to work so well? I'm not willing to give up on it because it seems like it should be so easy!

I also went out and bought a foam roller this weekend. I never thought I would be able to get make cakes this smooth in less than 2 minutes! It normally takes me 15-20 minutes with a spatula and hot water and even then I am not always satisfied.
