Need Chocolate Mousse Filling Recipe

i am looking for a simple, yet yummy chocolate mousse filling recipe for a cake I am doing tomorrow. I searched the web, but didn't find anything that looked quite right, so I thought I'd ask the experts! ![]()
Also, will I need to refrigerate the cake when I use this kind of filling?

Hey Angela -
I don't know if this is simple for you (my eighth graders used to love to make this) or not, but it's a very, very good chocolate mousse. I use the darkest chocolate I can find and it perfectly complements a chocolate cake. It's great as a filling - you can see a chocolate ganache covered cake in my photos (it's got violets on it). The piping is the mousse.

La Mousse au Chocolat
(Chocolate Mousse)
2 c. chilled heavy cream
4 large egg yolks
3 T. sugar
1 t. vanilla
7 oz. fine quality bittersweet chocolate, chopped
(This should not be unsweetened chocolate. The chocolate should contain at least 50-60 percent cocoa solids.)
1. Heat 3/4 c. cream in a 1-quart heavy saucepan until hot.
2. Whisk together yolks, sugar and a pinch of salt in a metal bowl until combined well, then add hot cream in a slow stream, whisking until combined.
3. Transfer mixture to saucepan and cook over moderately low heat, stirring constantly, until it thickens. Pour mixture into a large bowl and gently stir in vanilla.
4. Melt chocolate in a glass bowl in the microwave one minute at a time at 50% power. (Or you can do this with a water bath on the stove.) When chocolate is completely melted, whisk chocolate into custard until smooth.
5. Beat remaining 1 1/4 c. cream in a bowl with an electric mixer until it just holds stiff peaks. Whisk one fourth of cream into chocolate custard to lighten, then fold in remaining cream gently but thoroughly.
6. Let chill a bit before piping.
thanks for the recipe. i was trying to avoid something with heavy cream, but maybe i can't! the cake would need to be refrigerated with this, right?

Yes, it definitely needs to be refrigerated. I'm picky about chocolate mousse because I grew up with the real deal, but maybe one of those mousse dessert mixes in the aisle near the puddings and jell-os wouldn't need to be refrigerated.
