How long can I leave my meringue powder in the refrigerator? I don't make royal icing that often, but got to wondering if it ruins. I keep it in the original can and then I put the can in a ziplock bag. Thanks!

Is it Wilton Meringue? I don't refirgerate mine. It says right on the can that you don't have to. I keep mine in the cupboard until it is gone!

I believe Wilton recommends refridgerating after it is opened might want to double check on their website for the exact amount of time I think that it keeps for a few months in the fridge or approx. 6 months in the freezer...

I know the can that was in the attic for 6years had some interesting small dark particles in it...so don't store it there hee hee!

Since it's dried egg whites therre it would likely do better at cooler temperatures over a longer period of time.

When I took the Wilton courses, the instructor said it wasn't necessary to put in refrigerator. I have not had any problems just putting mine in the pantry. icon_smile.gif

i keep mine in the refrigerater also. it last longer interms of clumping up. when its in the fridge its clump free.
