Basket Weave Help!

Just finished course II and my first basket weave last night...anyone else ever have the basket weave tip clog...for me it kept clogging and it was so frustrating, everytime i would start to get in a good routine here came a clog...and then i just had to get a toothpick out to clean it.... icon_mad.gif

What am I doing wrong?

Sounds like lumps in your icing. Are you sifting your powdered sugar before making your icing?

Could be that your icing is too stiff or that your tip got a little squished. Try opening your tip a tiny little bit. If that doesn't work, try a little thinner icing.

yeah i sifted everything....and I couldnt find any lumps in the frosting..... (that was my first thought as well) just seemed like perhaps I was going to slow or not pushing the frosting out even and then it was drying in the corner or something...who knows.

You should also sift your meringue powder if using it, especially if the can has already been opened. Since it has modified food starch in it (usually cornstarch), it can lump up from humidity in the air - those cans are not perfectly airtight.

I dont use meringue powder (except in royal)...but thanks that is good to know.

How long did you beat the frosting? It may be that the crisco/butter didn't get thoroughly incorporated into the confectioners sugar (or vice versa).

sounds like you didn't mix the icing long enough.... even the smallest amount of shortning or butter that has not been mixed in properly can clog up the tips. i mix my shortning and butter for at least 5 minutes( scraping the sides lots) then i add my icing sugar( i never sift) and then i beat it fot a good 10 minutes. hope this helped

I have had this problem of clogging just one part of the nozzle whatever I did and I sifted my icing sugar before making the icing.

Now I use a veryfine sieve and I get about one tablespoon of sugar crystals per 450 g icing sugar 10x. Those are the ones which blocked my tips.

thanks for all your help...sounds like to me I am not mixing my BC long enough....never thought about the butter and shortening being the problem...
