I am in need of some serious help. I was volunteered to make dessert for a get together for a gentleman at work who just got married. He is from India and so is his new wife. This is not a reception, just a celebration of themarriage as well as her welcome to the US, so I didn't want to do a cake, I was thinking Petit fours.
My question is?? What kind of cake (white, chocolate), icing (color), design (flowers, transfer sheets) do I do for these Petit fours.

I have found that petifors will hold up better with a denser cake, like pound cake. Petifors are alot more work then a cake. I would use a jelly roll pan and bake a thin layer first. Dump that cake on a board and freeze. Bake another thin layer. Then put that layer in to freeze.. Once chilled take it out and ice the top of one , then pull the other out and put on top, just like you would on a layer cake. Try to line them up as even as you can. Now ice the top only with a buttercream and put back in to chill. Once chilled you can measure and cut them 2x2 with relative ease. This way you will get a nice smooth cut. You could use a hot knife also. Once your cakes are cut, you are ready to put your poured fondant icing on them. Use a fork and put a cake on the fork, and then spoon your icing over it making sure that you get the sides covered. Remove that cake and place on a cooling grid to dry. They will take a day to dry well. You are then ready to decorate them. You can put roses on each, borders, drop flowers etc on them. You can also cut these in shapes, instead of squares. Or if you want to save a little time, use your mini cupcake pans and bake. Invert the little cake and use the Wilton candy melts, melted and poured over them. I hope I haven't confused you.
