Cake Filling Problem, Please Help!

I made the easy lemon cream cheese filling from the recipes. It has cream cheese, lemon instant pudding, milk, heavy cream and sugar (whipped). It's very bland and not very sweet. How can I add flavor to it without making it runny? My only thought is to add lemon extract and powdered sugar.

YEP, i had the same thought...lemon flavor and a lil extra sugar , should be good to go...good luck

I don't suppose you have any lemon oil, do you? I used to buy it from a specialty shop in leiu of extract and it works like a mother but God almighty, don't use too much... if you have some, 1/2 tsp. would do the trick.... did you use reg. pudding and not sugar free?

If you don't have the oil, I would use the extract and powdered sugar... it sounds like it can be salvaged... it also sounds really good icon_smile.gif

Try the grated (microplane!) zest of a lemon, and allow it to sit overnight. The oils in the lemon zest will permeate the filling and give it more tart lemon flavor.

That would have been a great idea, but I have to put the cake together right now so that it will be ready by the time we leave at 5:00. I don't have any lemons on hand. Next time I'll try adding lemon zest. Thanks!!

Nope, no lemon oil, just plain old extract. I'm going for the extract and a little powdered sugar. Actually, I sandwiched a little bit between the cake scraps and it's not too bad as it is. I'm pretty sure I didn't buy the sugar free pudding. That would be funny. That stuff tastes awful! thumbsdown.gif

Thanks for the help, guys. It's DD's 8th bday today and I have to get this cake done so we can get out of town tonight.
