It's in the high 90s here today and I could not get my cake to smooth for the life of me!! (See my farm cake in my photos
) I'm sure it's the humidity, but what do you do when this happens?? I use 1/2 butter, 1/2 shortening BC, and normally I use the Viva method, which normally works great for me. I ended up just wetting my BC spreader/knife and trying to smooth it that way, but I'm not really happy with the results.
when the humidity gets high here (I live less than 2 miles from the beach) I have to close up all my windows and turn on the a/c. The a/c strips the air of it's moisture and works like a charm for getting my icing to crust when it's too humid.
I know exactly what you mean although I have central air so I typically do not have this problem in the summer. I do have this problem before I have the air on and it is awful. What I have done is place my cake in the refrigerator. It helps to dry out the moisture in the icing. I just keep checking on it and then use the Viva method. Sometimes I can only do half the cake and then I need to refrigerate it again and then do the other half later. Hope this helps. Your icing really does look good, and your chocolate transfers are awesome!
