I was looking at different chocolate recipes for cakes, fillings & frostings.
Alot seem to add coffee. I hate coffee and want to know if you taste it in the chocolate recipes.
TIA,

but do you like mocha?

if yes -- then you like coffee in chocolate.

how pronounced the flavor will be depends upon

> how strong of coffee you use

> how much coffee you use

> the type of chocolate used (darker harder to tell)

----

can range from

hmmm....there's something there but can't really tell

to

heavy duty mocha (mocha that tilts toward coffee flavor)

You have to like coffee to do these recipes! I JUST made my first batch of mocha cake and it is DELICIOUS! I really like coffee so I made a really strong brewed coffee and then I let it chill for a day! You can use it sooner but, the results are GREAT!

You typically do not taste it if it is not deliberately a Mocha cake.

For instance. I have a cake recipe (Collette's?) that you use coffee, but don't taste it. It enhances the chocolate flavor. I have also made a chocolate mix using the extender and subbed coffee for the water. I thought that I would make a mocha, but there was no coffee taste at all.

I think that if the receipe calls for more than a cup of brewed coffee or for expresso or instant coffee, then it will taste like coffee.

I agree with smbegg. And usually mocha will be milk chocolate and coffee or espresso. Most dark chocolate cake recipes have it in there for depth of flavor and darkness, but not the actual coffee flavor. I used to make a fudge all the time that had coffee and simple syrup and chocolate with no coffee flavor.

BTW...HoW could you HATE coffee?

i thought that the coffee flavor was GREAT in mine! I must've brewed strong coffee cause I could taste it! But, that's what I wanted!

coffee actually adds a depth to the chocolate flavor and just like everyone has said, the stronger the coffee you use the more you'll taste the coffee flavor. i always add coffee to all my chocolate recipes and people who hate coffee can't taste the coffee, they always comment on how rich it tastes.

That's what I was wondering if it really enhances the chocolate flavor without adding the coffee flavor. Thanks for all your responses. I guess I will have to experiment! (oh darn! icon_lol.gif )

And Doug, nope not even mocha flavor!
