I just had a potential customer to ask me about doing a wedding cake in March. She wants a checkerboard cake. Do any of you know if you can buy or how you can do a big cake like a 16" or 14" checkerboard style inside. She is going to need a cake to serve about 250 people. All I have ever seen is the 9".

You know, you can do a big one , but what you need to do is pipe
the batter. Use a big round tip..The batter has to be
somewhat dense batter ![]()
I do mine withouth any special pans or tools.
Get some posterboards (thick paper) and cut strips a little but thicker than your pan height. With those strips of paper and some tape you can make as many circles as you want . Those are going to be your separators.
For example, for your 14" cake. I will make a circle with a diameter of 12", next one 10", 8", 6" and finally 4".
You will need a cake batter that is not runny, the checkerboard recipe that wilton has in their website it is pretty good for the looks, but a little bit dry!!!
Put your vanilla and chocoalte batter in big pastry bags and your paper circles in your pan. Start piping your batter first vanilla, then chocolate, vanilla, etc.
Make sure you fill all of them at the same height. When you are done carefully take each piece of paper out, finally tap the pan a couple of times and bake.
