Anyone ever use a flourless cake recipe? If so, how did it turn out, and how will it hold up for stacking?

I've done a few flourless recipes ... I'm guessing you're talking about chocolate?

I don't know think they'll work for stacking. The recipes I've made vary from being very light and fluffy - soufle like and somewhat crumbly - to being super dense and fudgy, but somewhat soft - their shape won't bounce back like a regular cake will.

I don't think I would try it, but maybe someone else here has?

yeah i was talking about chocolate. I've never made one before. I saw a recipe that Emeril made that got really good reviews. Was just wondering.

I love the flourless cakes! You can put ganache on top or even just a drizzle of melted chocolate or raspberry sauce, or just ice cream, and they're good to go!

I saw that it got really good reviews, just didn't know what kind of texture it was, was it something just for a dessert, was it something that you could decorate, was it a type of cake you could stack? That's why I was wondering. A lot of people seemed to put fresh raspberries and a mousse sauce or something similar on it.

I've tried emeril's recipe and it's really good, very rich! I put whipped ganache on it mmmmmmmmm.

Most flourless choc cake recipes are quite fudgey in texture and won't stack worth a darn. It's not really a stack and decorate kind of dessert.

was it something that you could only use as a dessert? Not something you could use otherwise? I'm trying to find some good scratch cake recipes. I haven't found any that I've been real impressed with.

just for a birthday. I'm wanting to find a good scratch cake chocolate and white recipe. I don't want to use box cakes anymore. I've never made a flourless one before, so I didn't know what to expect. I'm gathering from all the responses that it can be a double layer single cake or a sheet cake and not much else. If anyone has any good scratch cake recipes they'd care to share I'd be grateful.

I'm thinking I'm in need of buying some books. Have you made chocolate scratch cakes with coffee in them? I asked this on another posting, but thought I'd ask on this one too. If you have can you taste it in it? I hate coffee, so I've never made one with it in it.

I got a recipe from someone on here for a chocolate cake and it had coffee in it. You don't taste the coffee that much, but it does give it a different flavor. I don't like coffee either and I really liked the cake. My family LOVED the cake.
