I need an easy and yummy lemon custard filling recipe for a wedding cake I will be making this weekend!

I use the canned comstock lemon pie fillling, doesn't get much easier than that! (and it tastes good too)

Believe it or not I just got rave reviews with doing a lemon mousse --- I followed the recipe on the Dream Whip box for Chocolate Mousse and substituted lemon pudding -- added a bit of lemon zest to the final product and everyone went on and on...

The recipe is simple:

Make one packet of Dream Whip (put one packet in mixer, add 1/2 cup cold milk and beat for 7 minutes)

Put one packet of instant pudding in bowl, add 1 1/2 cups cold milk and whisk for two minutes.

Fold completed Dream Whip into pudding.


I make this the night before because it seems to meld better when it sits overnight...makes a yummy fluffy filling that doesn't seep into the cake.

buy lemon curd...you can use it straight from the jar or mix a bit of it with buttercream...lemon curd is just a fancy name for lemon filling. Same concept. I also use lemon pudding mix, 8 oz cream cheese and tub of cool whip.

the lemon curd recipe in marthas new baking handbook is awsome. we are out of lemons for the time being in jamaica. i had to buy some lemon juice in the store. have not tried it yet though. but ehn made with frsh lemons this recipe is great. icon_sad.gif i cant find my book. i was going to take a pic of the recipe and upload it. i cant find it...when i do ill upload it.

correction to my lemon recipe...it is:
1 8 oz cream cheese
1 small box of lemon instant pudding
1 3/4 cups milk
1 cup heavy whipping cream
2 tbls sugar...........mix cream cheese until smooth, add milk and pudding and beat until thick (2-3 mins)...in separate bowl whip sugar and whip cream until peaks forms and fold in pudding mix by hand. Refrigerate until ready to use. (I had this confused with another pineapple recipe)

I use :
1 cup cream
3 tablespoons powdered sugar
1/2 t each vanilla and lemon extract
whip and stabilize with 1 teaspoon disolved gelatin
fold in 2 cups of lemon filling ( the kind that comes in the plastic pouch in cake decorating stores)- Sug

What i used in my weding cake!
1/3 c lemon juice
1 can Eagle Brand Condensed Milk
stir - let set about 5 minutes - enjoy!
