First Wedding Cake Due Tomorrow! Help!!

Ok so I am really kicking myself for volunteering to make my friends' wedding cake, getting married on Saturday. Not only that, but somehow I was also suckered into doing the grooms cake. I am using the Wilton floating tiers stand so there's no cake construction involved. I have finished the top and middle tier and they look great. I started the grooms cake and just got so rushed and flustered that I wound up destroying it icon_sad.gif

Since I'm doing this for free, I told my friends that the only stipulation is that I deliver the cakes tomorrow and store them at the reception site refridgerator since Saturday is my birthday and I am visiting my parents out of state. So that means I have to drop them off tomorrow.

I still have a 14" round bottom tier and an 8" round for the grooms cake. I tried making a practice 14" last week with the heating core and it was a disaster. The middle actually cooked faster than the outer edge. It looked like a volcano had erupted!!! icon_mad.gif

So my question is, can I really knock out all of this tonight (since I'm working during the day) or am I just doomed?? And will the cakes be ok refridgerated til Saturday? (I have the first 2 tiers frozen right now) Help!!

Everything will be ok!

You may be staying up a little later than you normally do, but you can get this done tonight. icon_smile.gif

For the 14'', what temp was your oven at? Maybe you can try lowering it a little bit (to ~ 325) and cooking it for longer. Instead of using the heating core, try using 2-3 upside down flower nail in the pan. If you have baking strips, use them.

The cakes should be fine refrigerated untill Saturday.

Everything will be fine!!! You may be exhausted afterwards but everything WILL be great!!!!
